Well - with individual stars appearing as no more than a pin-point of light in even the largest telescopes.....
I'd have to go for a double star that has contrasting colours.
Albireo in Cygnus is a lovely pairing of a yellow-orange star, with a deep blue - and easy to split at low power in even the smallest telesope.
Or maybe Almach in Andromeda - a tighter double, requires more power than Albireo, but the primary is a deeper orange than Albireo, paired with a pale-blue secondary.

Constellation? - That's a toughie
Obvious one is Orion, with the beautiful Orion nebula, and the complex of clusters and nebulae around that area.
Personally, I'm an open cluster fan - Cassiopeia is open cluster 'central', including some of my faves.
Then there's Auriga - the trio of Messier open clusters m36, m37, m38 - plus the 'smiley-face asterism next to m38 - the 'leaping minnow', with ic405 and ic410 either side of it.....

I'd better stop there, or I'll be on all day - LOL

I have ties, basically massive stars that are extremely likely to explode soon

eta carinae is my favorite star due to its sheer mass, and likeliness to explode, I am also a Betelgeuse fan as its likely to explode but will be close enough to observe in great detail, the pistol star is the hugest star that i know of in the milky way.

But my all time favorite star is Sagittarius A*, its the super-massive-black-hole in the center of our galaxy I like it due to its mysteriousness, no one really knows much about it. I also like it due to the fact that it keeps us from hurdling into another star.

As for constellations i like Orion, due to the major diversity of stars and nebulae

Being very new to actually looking close and learning the stars ... it seems my favorites keep changing... was Arcturus for a while. Most recently back in June, Antares rose and I darn near lost my breath at the brightness and color thru my binocs. I'm sure there will be others to astound me as the seasons change in my first full year of observing.

i like Orion and Scorpio. Scorpio is the first constellation i recognize, every time when i see scorpio, it recalls my memory that i first learn stargazing.
