they use prisms to erect the image. Total internal reflection... no mirrors.

You can see great distances with both eyes.

Only one eyepiece focuses, usually the right. You adjust the central focuser so that things look good in the left eye, and then you fine-tune the right eyepiece so that the view is sharp for that side. Then you'll have a great focus for both eyes.
The numbers such as 7X40 or 11X80 that are printed on them tell you, with the first number, how many times the binos magnify, and, with the second number, how big the diameter of the objective lens is in millimeters.
